Pasta w. spinach pesto



  • 1 handful spinach
  • 1 clove garlic
  • 1 handful fresh basil
  • 1 tsp salt
  • 3 tbsp olive oil
  • 1 tbsp nutritional yeast
  • 30g almonds (sometimes I use sunflower seeds or cashews, it depends on what I have in my kitchen)


  • Put all the ingredients listed above in a hand blender and blend until it turns into pesto.


  • Take as much pasta as you like and cook the pasta after package instructions.
    • If you buy your pasta in bulk, then:
      • 160g pasta w. 800ml water and 1 tsp salt
  • Then cook the veggies and your source of protein you would like with the dish. I used:
    • Tofu & mushrooms
    • But you can also add: Asparagus, cooked green lentils, chickpeas – like I always say, the sky is the limit.
  • Cook the mushrooms/tofu on a pan with some oil until it’s golden brown.
  • Mix the pesto, pasta, tofu and mushrooms together and serve it in a bowl. You can add toppings if you like. I normally add some sesame seeds/sunflower seeds and chili flakes for some spice(if you like that).
