- The juice from 1 lemon or lime
- 1 handful fresh mint
- 1 watermelon
- 3-4 peaches
- 1 thumb fresh ginger
*You can also serve the salad with red onion, vegan feta cheese or fresh chili
- Wash the peaches and remove the “skin” from the watermelon. Cut the peaches and the watermelon into small-medium chunks and put them in a big bowl or a salad tray.
- Grate the ginger and finely chop the fresh mint and mix it in with the rest of the salad. Squeeze the lemon juice over the salad and mix it all together.
